What a great question. I actually had to do this myself not so long ago. So you take one side off (the ends are best to start with). Replace the end with the new boards and corner posts and fix to the existing one. Do this the whole way around until the bed is replaced. It takes a while but works really well
If you take all of the old bed away in one go the soil will just all collapse.
