The Guinea Pig bedding actually sounds ideal with animal droppings, hay and wood pellets you couldn't get better for the carbon part of the mix. Yes grass can be an issue in the winter so you are 100% right. Clippings, weeds etc will supplement perfectly at this time of year. It is perfectly fine to start at this time of the year coming in to the Spring particularly and you can of course use some of the product from your existing compost pile but don't add to much in to start with
